Aglio e Olio

Due to a certain YouTube channel, my boyfriend and I refer to this dish as Breakup Pasta. It’s a very simple and quick dish that is fresh, light yet filling, and perfect for a warm summer night.

  • 1tbsp Salt (Iodized)
  • 2tbsp Olive Oil
  • 1lb Fettuccine
  • 1 1/2cup Pasta Water
  • 1/3cup Olive Oil (Good)
  • 10 cloves Garlic (Sliced Thin)
  • 1/2tsp Red Pepper Flakes
  • 1/3cup Parsley (Fresh/Chopped)
  • 1cup Parmesan Cheese (Fresh/Grated)
  • 3 cranks Black Peppercorn

Bring a large pot of water to boil, add the Salt, Olive Oil, and Fettuccine. Once the pasta has been cooked, reserve the Pasta Water, drain, and set aside.

Use the same pot and heat the Olive Oil. Add the Garlic and cook until golden and fragrant, about 2 minutes, then add the Red Pepper Flakes and cook for 1  minute. Pour in the reserved pasta water and bring to a boil. Lower the heat and let simmer for about 10 minutes, or until it has reduced about one third.

Remove the pot from the heat and combine the pasta with the garlic sauce. Slowly add the Parsley and 1 cup of Parmesan Cheese in order to not create a ball of cheese.

Plate the pasta mixture and top with Black Peppercorn, parsley, and parmesan, if desired.
