Cacio e Pepe

Don’t be fooled by the short ingredient list, this pasta dish packs a lot of flavor into seven ingredients and about 20 minutes of cooking. Add a little extra pepper for more kick or more pasta water for a thinner sauce.

  • 1tbsp Salt (Iodized)
  • 2tbsp Olive Oil
  • 1lb Thick Spaghetti
  • 1c Pasta Water
  • 1 3/4c Pecorino Romano Cheese (Grated)
  • 3tbsp Butter (Tabbed)
  • 1 1/2tsp Black Peppercorn (Freshly Ground)

Bring a large pot of water to boil, add the Salt, Olive Oil, and Thick Spaghetti. Once the pasta has been cooked, reserve the Pasta Water and drain.

Return the pasta and reserved water back to the pot and place over low heat.

Add the Pecorino Romano Cheese, Butter, and Black Peppercorn. Stir until a creamy sauce has formed and everything has melted, or about 5 minutes.

Place in a bowl and season with salt, pepper, or more cheese if desired.
