Sesame Noodles

The flavor these noodles had was amazing, and the runny yolk of a poached egg would have brought this whole dish to a different level. Now I just need to master poaching an egg.

Sesame Noodles

  • 3 cloves Garlic (Chopped)
  • 1/2c Soy Sauce
  • 2tbsp Sesame Oil
  • 2tbsp Rice Vinegar
  • 2tbsp Brown Sugar
  • 1 1/2tbsp Sesame Seeds
  • 2tsp Red Pepper Flakes
  • 1lb Thick Spaghetti (Whole Wheat)

Wilted Greens

  • 2tbsp Olive Oil
  • 2 cloves Garlic (Chopped)
  • 8oz Spinach (Fresh)
  • 3 cranks Sea Salt
  • 5 cranks Black Peppercorn

Fried Eggs

  • 2tbsp Olive Oil
  • 2 Eggs

Prepare and set aside the Sesame Sauce by mixing together the Garlic, Soy Sauce, Sesame Oil, Rice Vinegar, Brown Sugar, Sesame Seeds, and Red Pepper Flakes.

Boil a large pot of water and add the Thick Spaghetti. Cook until tender, drain, and return to the pot removed from heat. Add the sesame sauce to the spaghetti, place cover on pot, set aside to allow spaghetti to soak up flavors.

While the noodles are cooking, prepare the Wilted Greens by removing the stems from the fresh Spinach and chopping the Garlic. Heat the Olive Oil in a pan large enough to hold spinach and add garlic, cook 1 minute. Add the spinach and cook until wilted, but not mushy, about 2 minutes. Remove from heat.

Heat Olive Oil in a skillet and fry two Eggs to your yolk preference.

Plate Sesame Noodles, Wilted Greens, and Fried Eggs in a bowl and serve.
